Black Bean Brownies
I served these on Saturday as a dessert when friends came to dinner. I served them with a dollop of Total Greek yoghurt. They were a real hit so I thought I would share the recipe so you could try them yourself. So easy and you can make them in advance to allow more time with your friends. They are not a healthy snack, they are a real treat so don’t get carried away. .
100g dark chocolate chips
3 tbls coconut oil
1 x 400g tin black beans (drained)
175g medjool dates (pitted)
3 eggs
70g muscovado sugar
1 tsp natural vanilla essence
55 g cocoa powder (I used raw cacao powder)
1 1/2 tsp baking podwer
1/4 tsp cinnamon powder
1/4 tsp sea salt
Preheat oven to 180 C/350F. Line an 8 inch shallow tin.
Add 55g of the chocolate chips to the coconut oil in a pan and heat gently until melted.
Meanwhile in a blender/food processor, put the beans and dates and blitz until a coarse puree. Add the eggs,sugar,vanilla essence, melted chocolate and oil mixture. Blitz.
Add the cocoa,baking powder, cinnamon and salt to the blender and blitz until mixed together and smooth.
Add mixture to the tin and bake for 25 mins until risen, beginning to crack around the edges and slightly soft in the middle.
Sprinkle the remaining chips on the top, leave to cool for 20 minutes and then turn out onto a wire rack until completely cool. Cut into approximately 16 small squares. This will store in a tin for a couple of days ( if you can leave it that long before anyone eats it all)
cant believe how utterly delicious these are, and good for you….just dont
eat half of them before the kids get home!
